Wine Chicken
Ingredients:
1 chicken, about 2.5 catty
2 cups of ice cubes made from boiled water
Seasoning:
Salt 1.5 teaspoon
Ginger juice 3 teaspoon
Soya sauce 2 teaspoon
Sugar 2 teaspoon
Wine (Siu Hing Fa Diu) 0.75 cup
Steps:
1. Clean chicken. Wipe dry. Use 0.25 cup of wine, 1 teaspoon of sugar and the other seasonings to marinate the chicken, both outside and inside, for 1 hour.
2. Grease the skin of the chicken lightly with a little cooking oil. Steam for 15 to 20 minutes depending on the size of the chicken. Turn the chicken half way through.
3. Keep the chicken sauce in a small bowl. Put the cooked chicken into a deep bowl/pot. Rub the ice cubes onto its skin and leave it there to cool.
4. Put the remaining 0.5 cup of wine and 1 teaspoon of sugar to boil. Add in the chicken sauce from 3. Try this wine sauce and adjust the taste if needed. Leave to cool.
5. When the chicken is cold, cut it into serving size. (It will get messy if it is cut when hot.) Lay the chicken pieces flat (1 to 2 layers) in a pastry dish. Pour in the wine from 4. Cover with cling film and keep in the fridge for at least 12 hours.
6. Remove chicken from fridge 0.5 hour before serving. It will then be tender and not icy cold.
Remark:
The taste of the wine chicken depends heavily on the quality of the wine. Buy Siu Hing Fa Diu of medium price if there is a choice.
