川醬牛展
用料:牛展2斤 鹵水料1/2杯
川醬用料:水 1 2/3杯 生抽 2/3杯 冰糖 2兩 鹽 1茶匙
沙糖 1 湯匙 辣豆板醬 1湯匙 酒 麻油(隨意)
做法:
牛展用薑蔥酒出水,再用鹵水料煲腍(用筷子可輕易插入),取出盛在大碗內。
將川醬用料煮滾,倒入牛展,浸至翌日。可用叉把牛展四周「篤」洞,以便可更入味。浸時可放雪櫃,雪凍的牛展較容易切薄片。
