臘味糯米飯(不是生炒)
材料 (製 5 - 6 飯碗):
a. 糯米 1 cup (measuring cup)
b. 白米 0.5 cup (measuring cup)
c. 臘味 any kind, as much as you like, finely diced
d. 蝦米 as you please, soaked in water till soft, finely chopped
e. 冬菇 as you please, soaked in hot water till soft, finely diced
f. 瑤柱 as you please, soaked in hot water till soft, break up into fine pieces
g. 蔥 & 芫茜 optional, finely chopped
做法:
1. Mix & clean a & b. Soak them in 3 cups of hot water in a Pyrex pie dish for 1.5 to 2 hours until they no longer absorb any more water.
2. Put c in a dry wok and stir fry with a low heat to squeeze out the oil. Pour the oil away.
3. Put d, e & f in the soaked rice & glutinous rice. Check that the water level just cover up all solids in the dish. Add 2 tablespoons of dark soya sauce, some salt and a pinch of sugar. Cover up the dish with Glad microwave wrap (to retain all water). Microwave with high heat for 10 minutes. (Some prefer stir frying d, e & f in oil first to let out the flavour. I skip this to avoid adding too much oil in the food.)
4. The rice is almost done after step 3. Try the taste of a few rice grains. Add salt or light soya sauce if needed. Put in c. Stir well. Cover up the dish with Glad microwave wrap again. Microwave with medium heat for 10 minutes.
5. If you add g, do so after step 4 and microwave for 1 minute.
備註:
The glutinous rice looks and tastes like 生炒, but the oil content is reduced to a minimum. It's good for those who are health-conscious but can't resist 臘味糯米飯.
