My boss at home LO...VE beef stew. I've modified from most of the recipes that call for bacon, herbs, wine/brandy, and any unnecessary things. This is the most basic that give you the original taste of beef. You can modified it by adding vegetables, the recipe variations are limitless.
I used a heavy casserole and an induction cooker to prepare this dish. So, time to make the beef tender is variant depending on the equipment you use.
Step 1: Heat 1-tablespoon olive oil in a large pot over medium-high heat until hot. Add the meat in batches and brown on all sides. Set aside the beef for use later.
Step 2: Pour off the excess fat from pan, add 1 chopped onion and fry over medium heat until the onions are softened, about 3 minutes
Step 3: Add in tomatoes and fry until water release from the tomatoes
Step 4: Add a big tablespoon of flour and mix well with the ingredients
Step 5: Add a big tablespoon of tomato paste and fry for a minute
Step 6: Add chicken broth, just enough to cover the meat and bring to boil. 

Step 7: Return beef to the pot. Reduce the heat, cover, and simmer over low heat until the meat is fork-tender, about 1-hour
Step 8: After an hour, cut the beef into cubes and continue to simmer until beef is tender. You may add 1 to 2 tablespoon of ketchup at the end to add strong flavour to the sauce. My boss like it original though!
