Last Friday, we did the wines of Armand Rousseau at Langham Hotel. All the wines of the evening needed time to widen the differences among them. It was indeed, a tasting longer than usual. Regardless of personal preferences, all wines were good. Perhaps, it really did not carry any meaning to compare them at all!
A Domaine Geantet-Pansiot Charmes-Chambertin 1996, from quite the other spectrum, was used to contrast an Armand Rousseau of the same vintage .

The menu proposed by the chef Paul McLoughlin, originally from Montreal .
Seared Blue-fin tuna belly and lobster ‘Ceviche’, Melon jelly, fennel, cherry tomato, Sea urchin mayonnaise
Pan-seared Australian Sea bass, Seafood ravioli, fava beans, black horn mushrooms, Prawn emulsion(This one is good!!)
Slow-cooked duck breast with Foie-gras ‘royale’, Wilted spinach, morels and its consommé(THis one is ouragiously rich!!)
Individual cheese platter: Epoisses, Camembert, Morbier , Selles-sur-Cher( a lot of variety!! )
An excellent supper, with lots of culture.
